The sandwich. And I plan on elevating it from red-headed stepchild to the Marcia Brady of meals. Yes, if you make a little effort, the lowly ’wich can be a healthy and deeply satisfying—not to mention quick—dinner. It’s all about ingredients. Start with a great loaf of bread like rosemary focaccia or potato and scallion ciabatta, a quality meat such as salami, prosciutto, roast turkey or Montreal smoked meat, and some fine cheese. Veggie options are limitless. Go fresh and crunchy with sprouts and slices of cucumber and tomato, or sweet and tender by roasting peppers, onions and zucchini. Slices of mango or pineapple are great accompaniments to spicy chicken. Arugula and horseradish mayo with roast beef? Delish! And, of course, treat yourself to some good-quality flavoured mustards and be generous with the mayo. Complete the scene with a kosher dill and a pile of kettle chips.
